Oven Review: Choosing which oven to buy to cook or bake your food has always been a headache. To get the best results, use a different oven depending on the type of baking or roasting. Although a traditional oven may roast meat, some individuals, including myself, prefer to roast my meat in an air fryer oven.

Today we will be roasting the spring chicken. This is a very easy step by step guide for you to cook this crispy roast spring chicken in your house using the air fryer.

One of the special characters of the Spring chicken that I like is the nice firm texture of its meat as compared to Kampung Chicken (Ma Lai Kai) or the Village Chicken (Choy Yin Kai) which has a much firmer texture and will be better to be cooked using the steam or poached style. But if you fancy any these type of chicken, you can try it too. Secondly, the condiments used to roast this chicken are easily available in most kitchen and henceforth there is no need for any special trip especially during this period of Movement Control Order (MCO) for any special condiments.

Village Grocer Delicious Baked Cheese Tarts Secret Formula Revealed


We had the opportunity to find out first-hand, Village Grocer baked cheese tarts secret at a recent event held recently at Village Grocer SS15, Courtyard Subang Jaya, Selangor.


At hand to reveal this secret formula is non-other than Chef May Foo. If you are one of those that loves baked cheese tarts, the following secret formula will make you droll and you can use it to make these delicious cheese tarts; which is unveiled here for the first time.


"When we were putting together the recipe for the tarts, we looked at ingredients from all around the world and finally settled on a dairy-rich, cheese-based cake using New Zealand dairy," says Chef Foo. The secret is very simple; it is by always using the finest quality ingredients from New Zealand such as the dairy products like Anchor butter, cream and cream cheese from Anchor which are known for its richness, creaminess and high protein added Chef Foo.


What makes Village Grocer Cheese Tart special; is the used of 2 types of Anchor cheese to create the soft and fluffy filling which is Cream Cheese and Parmesan Cheese. 


Chef May Foo started her revelation with the preparation and baking of the tart pastry as per the enclosed recipe. She explains that if you always used the right quality product, in this case, she has formulated the recipe around the high-quality New Zealand product you will always be able to get the same top quality result.

Chez Leoniel French Cooking Class - Le France Festival 2016 at Alliance Francaise De Kuala Lumpur Lorong Gurney



In conjunction with the Le France Festival 2016 held from 12th May to 18th June 2016, Chez Leoniel presented a special French cooking class which was held at the Alliance Francaise De Kuala Lumpur Lorong Gurney, Kuala Lumpur recently.


For this cooking class, Chez Leoniel presented 3 dishes which the first is canapes followed by a Sturgeon soup and finally the highlight which is the Creme Patisserie.


Various canapes were prepared for the guest to enjoy with Cognac pairing by Martell.


One of the canapes served for the night is the Empurau fish canapes, which was pan fried and served with the German bread.



One of the unique features of this Empurau fish is that almost all parts of the fish can be eaten including the fish scales which is deep fried to a crisp.


The main highlight is the Creme Patissiere which Chef Leoniel take us each and every step to create this special pastry. What is important is the use of the right French ingredient from the type of butter

to the flour is critical to the final result. One of the critical steps is to ensure that the flour granules are adequately coated with the butter fat.


This ingredient is then mixed with the right portion of Omega eggs and kneaded in.


When done, the dough has to be kept in the fridge for at least 30 min to be air but for best result, overnight is ideal. This will give the pastry a light and fatty but firm base to support the filling.


Next, prepare and oil the tarts pan and place the dough evenly into the pan.



After the pastry is baked in the oven, line it with a layer of specially crafted cream.


Finally, layered your favourite fruit topping i.e. strawberries, mangoes, raspberries and blueberries and you have your fruits tart ready and to be eaten with your favourite cup of coffee.


Our final dish was the Sturgeon Soup which was pressure boiled for a couple of hours. The collagen enriched soup was great when eaten piping hot as when the soup cools down; the fishy taste is quite strong and can be a turnoff for some.


We really had a great experience to have the opportunity to learn the intricate preparation and the right techniques for baking French pastry and an evening of tips sharing which we truly enjoyed with the Chef Leoniel. We look forward to next year festival to enjoy some French cultural and dishes.
